pick whatever you want, because whatever you choose, you still won't have enough skills etc to be a serious contender in pvp, one of the things you will have to consider is income, how do you intend to earn money to pay for the skill training you will need, bearing in mind, new players are pretty much cannon fodder, PVP is fast and unforgiving, and new players face a steep learning curve, not just in terms of learning how to play the game, but in acquiring the skills necessary to survive, if you intend to pvp, then i would suggest you become a mission runner, and do combat missions, ideally for whatever race you've chosen's fleet. dont get too locked into the idea that professions as such, will have that much of an impact, they can give you a slight 'leg-up' intitially, but you still have to buy the skills. pick your targets wisely, in empire space you can't attack unless there is a wardec in force, but in lowsec you can find yourself in trouble very very fast, one of the mistakes people often mistake is that miners are relatively defenceless, a coveter, or worse, a hulk with a full spread of combat drones, and decent drone skills can take down a frigate in seconds. PVP is a long haul, as it takes time to become strong. Mission running will earn you cash and generate faction points that you can spend on needed equipment/implants etc, generally, if you get into a fight with someone who has 10m sp more than you, its a good time to start running ;D
