I read somewhere that f I lose my farstone, or disolve it off a piece of equipment, I can get another one from the NPC I hailed for it in the first place. However, does anyone know if I'll get back all the stats?

You will. Stats are actually flagged into your character so you can get and destroy the stone multiple times and not lose a thing. Same goes for the Intricate Wooden Figurine charm and PoP flagging stats.
