Well, i know its a bit late, but i'm going to start playing eq. I just have a few questions:
1.Whats the best server to start on? Something with low level toons, but still lots of high elvel people.
2. Would a Paladin be an alright class to start with?

1. pick any, it doesn't really matter since you will probably move if you start on Stromm, most of the servers are in a position of having a healthy population now the servers are merged.
2. I recommend Rangers as a starting toon, melee with spells and most importantly track to stop you getting lost and to find the mobs <enemies> you want.
what i really advise is that you do the tutorial to lvl 8 or so at least with every class passing the money via the shared bank untill you have tried them all and find what YOU like the most, then use the combined money to set up that 1 "main" char as the one you are going to stick with.

In my opinion, a tank(paladin,shadow knight, warrior) is a horrible first toon. They're the MOST equipment dependent and these days if you're not twinked(geared way out of your class by another character) you're usually below people's expectations. I would suggest a class that's not so essential, so you can grow with out geting hassled too much.
I suggest you don't be a warrior, paladin, shadow knight, cleric, druid, shaman or enchanter, untill you learn the game. People depend on these classes for a LOT.

Try Stromm or Povar - both have lower level populations.
My first toon was a paladin and I've never regretted it. Yes, equipment can be hard to come by and without it you will be behind other players of equivalent level and experience. But I've never had any trouble obtaining gear to keep me competitive. Remember gear alone shouldn't be the deciding factor for what class you chose to play.
You need to chose a character you WANT to play. Pick something that isn't equipment or group dependent and you're likely to have an easier time and more fun. Bard, Beastlord, and Druid are all great classes for your first toon and will give you the ability to group without being pivotable and offer some soloing ability in between groups. Some would add Necro to that - but the pure casters can be a bit hard to grasp for a first toon.
In the end only you will know what class is best.
Edit: Want to add to definitely do the tutorial - I spent 3 hours there yesterday and leveled my Wizard to 12. It's time well spent.
