XIVDB.com and MyHappy's videos are both pretty solid places to get info. With both there probably won't be very much info that you'll be missing out on.
From what I've seen, Kim's videos weren't that great. The couple videos that I saw were just of her talking about an aspect of the game while she did it for the first time. Her crafting video was atrocious compared to pretty much every screenshot video on the subject. I understand that Yogscast is all about the blind let's plays, but if you are going to make a video about a specific subject in a game, you should at least go over, research, and practice what you are doing before slapping the word "Guide" on it. I still don't fully understand why they were the only ones to get the OK to post video after how they felt about 1.0. Hell, they didn't even think it was worth their time or "brand" to play the game themselves.
Oh well, I suppose any info is good info when you aren't up to date, plus the inclusion of video might be useful.
I didn't have a problem with Yogscast Kim's video series. I don't think they were meant to be a guide, just a bunch of let's play videos of beta. I think they are there for the clueless newcomer to ffxiv or possibly MMOs in general, and as such I think they got a ton of potention subscribers that otherwise might not have had the game on their radar.
Yogscast is huge, so that's probably why they were the only ones allowed to do video. Mrhappys videos are great for learning all aspects of the game starting out though.
I agree that Yogscast Kim's videos were very... Amateur. We watched all of them but we didn't find out about them until we had been watching all of Mr. Happy's videos. Mr. Happy puts on a very professional front, he is informative and does his research. Every so often he misses a couple things that I personally learned during my beta experience but that is more bonus info than super strategic must know pieces.
My husband and I were trying very hard not to slap ourselves during Kim's videos. They eventually got slightly better, but she did little to no prep and has much of the terminology incorrect which she eventually corrects in the later videos. ( Ex. she starts by not being able to see the tattoo and face paint menus in Character Creator when she wanted to get rid of the paint that was part of the default face she selected, was calling the cities "worlds", had no clue how to use the maps or the quest completion indicators, and got herself lost by leaving the zone that she was in that had the completing npc).
Kim allows a good visual of running around that screenshots can't supply. However, she really should have done a dry run and figured everything out so it was comprehensive. I feel it was a wasteful use of such an awesome privilege.
Needless to say if you are just hearing about FFXIV and looking for info. Go to Mr. Happy FIRST. Then, if you want to see video of the beta gameplay watch Yogscast's Kim, that way you don't get confused and misinformed. Lastly, just try not to slap yourself watching Kim, some of her goofs really are terrible. We watched it mainly to sate some of our withdrawal while we wait for Open Beta to start.
