I'm a level 50 miner, so I dedicated about a day to mining and learning the system. Grade 4 cats are REALLY hard to get and require a level 50 miner with great gear to camp in Mor Dhona waiting for an Unspoiled Node to pop (once every 5 to 30 minutes). It takes a lot of patience to do these, so they should be very valuable. Same goes for Darksteel Ores and a few other items that are only obtainable through this method.
None of this matters for new players, but the point is... GATHER! Botany or Mining, go do it. You'll be a hero on your server and rich.

What about cooking? I was thinking that culinarian would be a good job to level... do people buy food at higher levels like they did in FFXI?
People did use food in 1.0 very often. In addition to granting bonus stats, almost all food has EXP bonuses! So yeah, cooking should be awesome still, but it might take longer to see returns as you wait for the community to realize the benefits.

It was SO reminiscent of FFXI and camping NMs.
There were like 9 miners in Coerthas and the second a node popped you just hear 9 whistles and an army of birds racing in the same direction. They really put an emphasis on gear for crafting and gathering.
For example, I previously had pretty damned good mining gear, but i had to spent a bunch of time in the beta melding perception and gathering to my gear. It became obvious that you'll need 2 sets of gear, as you cant max both stats with melds. With my gear, I had a 72% chance of mining dsteel, and only about 10% chance for HQ. I have 210 gathering 270 perception!

They are the same node for all miners in the zone, but there's no competition. Everyone gets 1 try at the node (which means about 6 mining attempts, based on gathering stat).
The biggest stat is going to be GP. I don't have enough GP to use my highest ability. Additionally, you need to use the 300 GP ability to render the materials "reachable" (they start as unreachable every time) so that left me with only 210 gp to mine it. It's tough!
