-Well, it's never too late to start the game. They've made it fairly easy for new people to catch up, that being said, there's a whole lot of story and questing ahead of you. Most content in this game is gated behind the main scenario, so that's something to consider if you're not a fan of stories.
-Server wise, Balmung and Gilgamesh tend to be the most active, but have a ton of RP going on. They're very hard to get a character created on, unless you're willing to try at 4am EST. Just check where the data centers are, which will help you choose a server in terms of lag. The NA one is based out of Montreal, Canada. There's one in Japan and one in Europe (not sure where that one's located.) I've never had any issues, but I'm about 1 hour from Montreal. (someone probably knows off the top of their head which data center is located where)
-Job wise, just play what interests you, Ninja's pretty good though some might chime in with what's top notch right now.
-As for end game, there's a few dungeons for "hardcore", Alexander Savage had a very low success rate, though SE admitted afterwards it was probably tuned a little too high. Semi-Hardcore, there's primals which are just one instanced fight that require decent skill to get through. Most of the time the struggle is finding other people with similar skill.
- Yes, the game will survive past 3.2, for those who have been around since the beginning, the game is beginning to stagnate a little, but people just starting though? Tons to do.
