I understood maybe half of what you said, because the systems were either not in place or I was not high enough level when I played the game before.
You must have played REALLY early, because I got into FFXIV not that long after ARR's release, and Roulettes were a thing.
Though, I suppose you could have missed it? Or not noticed it was there?
But yeah, you simply open Duty Finder and you'll see the Roulettes listed. As long as you are Level 16+ and have unlocked at least Sastasha, you can do the Leveling Dungeon roulette. I think the Guildhest Roulette is added at Lv10, even IIRC. Not entirely sure about that. It's something like that.
When you get Lv50, other roulettes become available: Trials, Main Scenario (the two 8-man dungeons at Lv50 having to do with the Imperials) and Lv50 Dungeons (a huge huge list of Lv50 dungeons, including hardmodes of older dungeons). Trials are unlocked by doing a few of the MSQ 8-man boss battles (Thornmarch, Leviathan, etc). This gives you more roulettes per day that give a ton of XP, I bet one level per day between the them, easy. Maybe more if you unlock everything. Just the Leveling and Lv50 Trials can easily give you a level or close to it depending on what you actually get. Sastasha or Ifrit probably won't give you a whole levelup, but Stone Vigil sure would at Lv40s!
And yeah, like Callinon said, you probably don't want to spam Palace of the Dead. Even I get tired of the place, and I love the XP it gives. I mix it up with some questing, the daily roulettes, and if I'm really getting bored, I'll just do daily roulettes and do some crafting/guildleves instead.
Also, there's the Challenge Log (make sure you unlock that! That's Lv30 IIRC). A well-placed Challenge Log completion can add 5-10% of a level and earn you other rewards such as GC seals for GC-related challenges, Money, and XP.
You can also do things like level your chocobo companion (again, Lv30 to unlock) by doing FATEs... FATE grinding gets old, but if you're accomplishing two goals with one activity (character XP and your bird's XP), I find it's a lot more interesting and pleasing.
Also, nice thing about Roulettes, is that if you're a Tank, you get a special bonus (well, it says "Adventurer in Need", but it's wanting Tanks 99.9% of the time, though I have seen Healers pop on it once in awhile). And if someone in the party has not completed that duty yet, you get ANOTHER bonus at the end. Being a Tank and ending up in a dungeon with a Newbie can add a huge chunk of XP, lol.
Just to give you some idea... I've been doing Lv50 trials with my PLD, once a day... my PLD is now almost 58 and I've not stepped foot in Lv51+ content yet with my PLD, JUST from doing Trials Roulette once a day for the past 2-3 weeks. I've been using the Leveling Dungeon roulette to get my NIN on 50 so I can do the Main Story Quest with NIN. But now that NIN is on 50, I use leveling dungeons on my WHM instead.
