for the first part i can only think that you may have been bugged, your appearances may be different, but you probably still have the same profession etc.
next, the only way to change servers is to apply to SOE to do so, its not free though, and there is a substantial fee involved, i think its 30 USD for a basic transfer without equipment, or 50 USD for one with. so unless you have a fairly high level char that you wish to move, then your better off just creating a new char on whatever server you wish to move to.
