As a BE Paladin, I am lv21 and I finished my Pally quest for a nice polearm (my friend helped me). Now I am in the Barrens/Ashenvale, are there any recommended quests I should do before doing the quests in Ashenvale like my guide asks me to?

Just do quests your level. Green and yellow ones. There are very few quests with items worth your while, unless you intend to level up very slowly. Otherwise you'll outlevel the rewards fairly quickly and should focus on gaining levels.
If you choose to do so, check the AH once in a while to try to keep your equipment up to date and check WoW Loot to know what you need from which instance. Again, don't run them thousands of times for items you'll outlevel quickly. Just get the basic and move on. You can manage most quests with average greens and even underpar items.

Southern Barrens is definitely where you need to be right now. Wait until you are at least 25ish before you hit Ashenvale, but the Barrens is definitely where you need to be leveling. Like other people have said, don't worry about the gear too much.
Have you done all the Wailing Caverns quests? If not, I would definitely suggest picking all of them up and doing all of those, because most of those quests are worth great experience points, not to mention doing a full run of Wailing Caverns will net you great xp too.

In a few more levels up by refuge point go to boulder'gor and grind there for some easy exp and good drops. Real common drops are mageweave and greater healing potion. The Ogres themselves are not that tough but don't try more than one when your at your level. You should be about 28 when you go there because the Ogres are around 34ish. Not too bad, stay aggro and heal. Bring lots of mana and you should be getting about 21-22,000 experience per hour. I did this until like 2 levels ago then had to move to the stranglethorn vale coast (northern top by the ruins) where the trolls and basilisks are. Thats a great grinding spot for 35ish levels. Fast levels and great drops there. I spent a whole lot of time questing up until like 4 levels ago then it just wasn't doing it for exp. I figure I'll grind a little then come back ina few levels and do some of those fun quests. Just some advice from one Pally to another :)
