It's actually much simpler than that, and yet at the same time isn't.
Paladins can tank just as well as Warriors and Feral Druids, but they do it in their own unique way. Warriors tank in the most basic way, by generating straight threat through their tank-oriented abilities with extra threat in Defensive Stance. Druids tank by generating extra threat on all of their damage abilities in Bear Form. Paladins tank by (don't miss it now) causing Holy damage which, with Righteous Fury up, will generate the threat you need to hold aggro above and beyond the damage and healing of your teammates.
Paladins do this through several spells, Holy Shield, Avenger's Shield, Retribution Aura, Consecration, Seals, and Judgements (preferably Seal of Righteousness or Seal of Vengeance for the last two), all with Righteous Fury up.
Also, if you want to tank with a Paladin, you really, really need to spec Protection to do it. You can do a passable job when Holy or Retribution, but you'll still be no better than a third-rate tank even at the top of your game.
