Allergies excepted, a lot of the time you may be surprised that ingredients you don't like when in some foods (or the specific foods which made you decide you don't like said ingredient) will taste good when in some other food you haven't tried yet. How do you know if you don't try it? If you automatically say "hold the pickle" on anything you order, you might just be missing a wonderful flavor combination that you might love.
Reminds me of a pair of brothers I know. An yeah, they were two of the people at that very taco shop years ago, so there's that. They are salt fiends. They literally salt everything they eat. The first thing they do when food is placed in front of them, no matter what it is, is to reach for a salt shaker. If there are no salt shakers, they will request salt packets, just by habit. I've seen them salt their pizza. Scary, I know.
Aside from the health issues, I always wonder if they realize how many flavors they are just plain missing because of this. I just can't imagine going through life with everything basically tasting the same because I add the same overpowering flavor to everything. While this is clearly in a whole different league in terms of food neurosis, it's one of the reasons why I tend to work hard to *not* be picky with my food. I'll at least try something the way it's prepared before making alterations. It reminds me of an old Taco Bell commercial. They were advertising some new item and in the bit the server hands the food to a customer and the customer reaches automatically for some hot sauce. The server jumps in and grabs the sauce out of his hand and says something like: "Could you at least try it first before adding sauce?".
That pretty much sums up my view on this.
