I have no idea what this means.

No, you didn't. Your statement "I read it as 'not cooked to where I ordered it' instead of 'done from an objective standpoint. " was 100% accurate.

I don't see how anyone can take it any other way. It was a simple "If/then" statement followed by quotes around the word "finished" to show subjectivity.

If you like "well down" THEN, bloody food isn't finished.
If you like "rare" THEN, tougher food is "overcooked".
If you like hot weather, then Florida is nice.

He obviously misunderstood as he's doing now and instead of just admitting in being wrong, he will continue to back peddle into an argument that I wasn't even making.

Just to make the point, the juice in red meat is not blood. It's a mixture of water in the tissue with proteins from the muscle and happen to be red because red meat (vs white meat) contains proteins similar to hemoglobin. [Extra pedant edit: Ok, all muscle contains the proteins; "red" meat just has more] But it's not actually blood.

If meat wasn't exsanguinated, you'd see red blood coming from pork and chicken as well rather than the clearish fluid you actually observe.

That reminds me of when my favorite sushi joint served beef sashimi. Ultra-thin slices of uncooked kobe beef with a bit of rice vinegar and soy sauce. I loved that dish and I was heartbroken when the health department put a stop to that.

Why would they put a stop to that? isn't that essentially the same as steak tartare?

I'm going to guess that you have to have a special permit to serve raw beef or pork, due to extra inspections and better processing standards or something. Sushi is different because saltwater fish have less of an inherent viral / bacteria risk due to the salinity of sea water.

The look on a waiter's face when you ask for steak tartare, medium well, is always amusing.

The correct answer (in the form of a question of course) is "What is myoglobin?". Smiley: schooled

The concern that one is eating blood or somehow taking an extra risk if your steak isn't "done enough" is silly. As mentioned in that link, beef does not contain the same internal bacteria that is found in chicken and pork. Thus, the only danger is something that is transferred *to* the cut of meat itself while its being handled. That's why it's always a good idea to cook the outside enough to kill any bugs (or if eating raw, carefully prepare the portion to remove any parts that may have been externally exposed prior to you handling it yourself). It's also why you should always brown ground beef completely (cause it's ground, so it's *all* surface if you think about it).

Preferring medium or well as a matter of taste is up to the individual, but there really are specific cuts and preparations that work well with medium/well (typically involving tenderizing and/or marinating and having other stuff than just the meat involved), but if you're ordering a ribeye or strip steak well done, you are basically wasting your money. The cuts intended for steak have a level of natural tenderness and flavor that is designed for less than medium doneness. There are other cuts and other preparations which you should order if you like your meat cooked more than medium, but most of them aren't considered "steak" in a strict sense.

That's just my opinion of course!

I have no problem with sushi. That's why I said "animals" and not food. Even sushi is prepared before consumption. He compared us to animals and animals just kill and eat. Even then, let's assume that difference is negligent, I'm sure he cooks the vast majority of his meats before eating and he isn't eating raw chicken right out of the coop.

Nope you clearly said food not animals. And seeing as fish are animals yes people do eat raw animals without cooking. His comment about sushi makes complete sense in both the context he is eating uncooked food and raw animals. Preparing sushi doesn't automatically mean 0 possibility of getting sick, it is less likely if prepared correctly. no different than if you cook a rare steak correctly.
