I've started the quest and I have my coffer key.
My question is, do I have to traipse around in my PLD suit or can I change to something else to open that coffer?

The coffer chest needs to be opened with the job that you have the quest assigned to. for example if you're on paladin's Af gloves quest, but found and opened the coffer as a ranger with no quest open for gloves, you will get items or gil.
So make sure to be on a job that is flagged for quest so that you could get yours gloves.

Things have gotten hectic on the home front so I didn't get any time to go coffer hunting over the weekend >.< However I think I'll have time to do it today. I'll put the shout out when we roll on that bomb.
I swear to god. Every single time I set my plans around running around that friggin place something happens. Suffice it to say I still haven't gone in there and from the sounds of it I probably won't be able to this evening either >.<
