Just finished the Blood Trilogy by Anne Bishop. Very well written. I loved it.
Deed of Paksenarrion is a good trilogy too.
I'm very into trilogies.

Im going to echo Thumb, here. If you havent read the Blood Trilogy yet, go check it out. I accidentally grabbed Dreams Made Flesh, a filling out of some of the stories mentioned and I loved the beggining so much I grabbed the trilogy before I finished reading it.
Edited to add, another really good trilogy was the Black Magicians Guild, by Trudi Canavan. Very good and should last you a little while
