i usually go to the mines in the nearby zones of where i am. also, choosing some forest or swamp or jungle type zones for the beasts is useful.

It would help to know if youre horde or alliance. That way we can answer your mining question better. As for skinning, just kill beasts instead of humanoids and you're basically all set
