3 steps(or like kinda 3):
Find the best item for each tier of meterial, for instance Soft Soled Linen Boots for Small shards(at least it's the best i found so far), GMagic essence and Strange Dust, look up the disenchanting % on thott and calculate the price based on average AH prices for material. You'll get a pricelist for each reagent with this and can base your price on usage. If you're swimming in dust (like most of us) deduct abit to clear them out and get your dust out of the bank.
On my Server (Alleria, PvE, EU) a boot will cost 7s if buying ressources from the AH.

180 Strange Dust
As you gain more Dust than you'll ever need, we take it out of the equation for a bit, the thing you're going after are essences and shards.
I sell shards on the AH for about 50s Buyout, so let's say it's 2G of the total value. Means without counting Dust you'll end up with 16s for an essence. Now your average Minor Beastslayer will cost about 32s + Dust + Service.
Still have to find the best items for the other tiers, but this is how i do it, though i charge a bit more than this because i invested a lot and need some returns before going on.
Now, if your customers don't agree on the price tell them to foad, honestly. Explain your reasoning and if they don't agree, just leave them. Don't try to compete with people who sell Enchants at 50% off because their friends/guild are stuffing greens and cloth down their throat because they need an Ench to make their crusaders. You'll end up broke, tust me.
