At level 21 you've really only seen the low-level stuff. Higher level herbalism allows you go gather high-value herbs (5 gold in a day is easy to make at the AH) and higher level alchemy provides buffs that can really improve the survivability and success chance of a group (or your own solo play). I'd recommend that you stick with it for now, what until you are level 40+ to decided on a chance.
