I picked tribal leatherworking but I should have picked elemental leather because my guild already has 3 other tribal leatherworkers and no elemental ones...would it be possible for me to switch to elemental without unlearning leatherworking and completely starting over? Or am I stuck with tribal?

you can't switch to elemental even if you unlearn the entire profession. Once you choose a specialization it's for the life.
