There are some inconsistencies in the trade skills, so they can be a bit confusing. For example, some trade skills require one or more tools in order to use them. Mining requires a pick. Skinning requires a skinning knife. Engineering requires about five different tools. But some professions don't require any tools. Leatherworking and cooking, for example, do not require any special tools. Most professions that require one or more tools do not require you to equip them. They just have to be in one of your packs. Fishing, however, requires you to equip the fishing pole. Some professions, such as cooking and smithing, require other external items in order to work. Cooking requires a fire. Smithing requires an anvil. But some professions, such as leatherworking and tailoring, can be practiced anywhere. Also, production professions, such as leatherworking, cooking and tailoring, work best if you open your skill book and drop an icon for the skill onto one of your bars. This way you can click your icon and open up a menu of things to make. For most gathering professions you don’t need an icon, as you can just right click on the animal carcass to skin it, the mineral node to mine it or the herb to pick it. The exception is fishing. To the best of my knowledge you cannot right click the water to fish.
All that having been said, once you learn the basics of crafting I expect you’ll find WoW’s professions system very easy to work with. As you’re new to crafting I’ll elaborate on one important fact. Each character can have five professions; two primary professions and all three secondary professions. In other words:
1. Primary Profession of your choice
2. Primary Profession of your choice
3. Fishing
4. Cooking
5. First Aid
You don’t have to do all of these of course, but they are available should you choose to pursue them.

Best of luck.
And most importantly, have fun.
