Alc/Herb is safe, very useful and profitable for all professions. Later on at 40 you will be using mail so Mining/Smithing is Viable also. Or Leatherworking (Dragonscale Specialized) and skinning is another one too. I usually do not try to replicate tradeskills across two characters, so if you have alts that gets into another arena in itself.

This is what you message was understood to say:
I can't figure out what Trades skills to go with for my Shaman, which will be a caster/healer. By the way, I hate engineering and enchanting with a passion.
(If this is not what you meant please PM me.)

If you are a shammy, or shaman I believe it is best to balance your stuff. That (balance) is a Shaman's strength. It is a Hybrid class which means it is supposed to be able to do just about anything.

Anyways, I would probably go with Skinning/leatherworking to make your own stuff.

The problem with smiths is that they can make mostly plate armor after level 40. Leatherworkers can indeed make some nice mail peaces. (turtle scale, dragon scale)

I'm a shaman and I learned alch/herb. Very happy about that.
