If you've been able to afford the cloth to get tailoring to 300 by level 40, You're on the right track for money.

Easy Gold professions:
Skinning - Sell leathers, but the hides I just vendor.
Minning - Sell minerals and gems.
Herbalism - Sell weed, tough you may want to consume them yourself.
Enchanting - Sell Shards, Essences and Dusts.

"Power" professions (EXPENSE but they buy you power):
Engineering - You can *use* very powerful items. (I wouldn't even bother making them unless to skill up or if they are not in AH and I can't get someone to make the items for me).

Alchemy - You could just buy the pots, but if you're alchemist you can carry a bag full of weed and vials and you can make the drugs you need on site. You can pop mana, healing, and buffing potions if you think your group needs them at a boss fight.

Mining is the most profitable of the professions. it is pure money (no material cost) and it is used more then leather. 15g by level 11 on a new server :D

Fishing is by far the most profitable profession. If you are alliance, once you are able to get to Menethil Harbor you can just rake the money in. For hordies, the best bet is to fish the oases in The Barrens.

Menethil Harbor - Firefin Snapper and Oily Blackmouth
The Barrens - Deviate Fish

All these fish sell for gold in the AH and are fairly easy to catch (by this, I mean that people below 80 skill can catch them). I will suggest that anyone who is going to sell anything at the AH should get the Auctioneer add-on. It helps you pick the best prices for selling.

I think alchemy/herbalism is a good moneymaker, it kept me in the latest gear all the way to 60 with my priest, with enough left over for training and mount. I have an absurd amount of gold sitting around now, from selling Arcanite Bars and potions, but the herbs themselves sell for more than the potion in most cases. Getting the herbs isn't a problem, and all but the lowest level ones like Peacebloom sell well at AH. You can make a living just selling Swiftthistle to rogues for Thistle Tea and it's an easy herb to find at lower levels.

I'm experimenting with other characters and mining does bring in the silver, too, and so does Enchanting. Disenchanting greens I get from questing or from my other characters is really profitable, once you begin to get shards from the items. On my server, skinning is the least profitable trade, possibly because there are just a lot of skinners out there. That's odd since many other trades use skins of one kind or another.

If you're not into RP then take two gathering professions until you get closer to 60, then switch to a crafting trade like Alchemy or Blacksmithing. I don't think you can make a lot with Engineering since most of what you make can only be used by other engineers, but I haven't tried it at higher levels yet. If you take two gathering trades, I'd make skinning your second one, so you won't need to switch back and forth between detecting herbs and ore.
