Just hit 250 Enchanting, and running low on Mats. Im lvl 58 and need a good instance to grind for mats, shards, ect...
Any suggestions?
An instance with Boss mobs, soloable, that drop BoP Blue items would be nice(so I dont feel so bad for Disenchanting them verses selling hehe)

Level 250+ Enchant mats come from greens/blues over level 41. Uldaman is probably the lowest instance that will regularly drop items you need to DE. Nice thing is that there is a boss close to the backdoor to kill for blues. Don't know any good outside area's for these drops.
The best way to actually get mats fast, is to make your own items to DE. From level 250 ecnhanting on up, Leatherworking is by far the best profession to support this. So many nice green items you can make for a few pieces of leather and some thread. Tailoring seems to always need so many hard to find items to make greens/blues.
If all else fails there is also AH farming. Look fot items that people have made to skillup their professions. Some of these things are actually really cheap, as no one buys these to use.

imo the best grinding class for enchant mats is probably a rogue, primarly due to the high dps and also sneaking by all the mobs you dont want to fight.
having said this, a pally can do the job too, just by healing and killing.
another way that you can technically grind for your mats is to give your cloth loot to a tailor to make stuff for you. this works great if it is a friend or guild mate. even greater if the items you are asking for can give the tailor some skill ups.
finally at level 58 you can grind on normal mobs that will drop items in the 50s. these are good for illusion dust and maybe a shard or two now and then.
