Having only played alliance, I may not be much help with good farming places for the horde, but this site can. Try typing in "wool cloth" or "small venom sac" into the search block to the left - look for an animal at a level you can handle that drops the item at a reasonable rate, and go kill them. Takes a lot more time than the auction house, but you do level up your toon as well as your profession. Finding herbs is much the same - search on the name of the herb and you will see maps giving locations where those herbs have been found. Find a zone you're comfortable adventuring in and go farm them.

The higher level you get, the higher level trade goods you'll find. Don't worry if you aren't leveling your professions and skills at the moment. If you hit a dead end, continue on your journey and you'll start getting the materials you need to start leveling it up again.

Since you are horde I would suggest farming the spiders in Stonetalon Mountain for venom sacs. These are abundant. Wool drops on the Boars in South Barrens. These are level 20-25 generally. Also you will find wool on the guys in Baed Moden in the South Barrens.
A piece of advice, don't worry about rushing to get secondary trades up. They will come naturally as you do your regular questing. Earthroot, Mageroyal, etc. will appear as you move up in your lvls.

I say skip the venom sacs completely, keep making heavy wool bandages, and then directly go to silk bandages. #1. you'll never use the antivenoms EVER lol so don't even bother. #2 you'll be fighting beast creeps that don't really drop anything nice #3 I'm lvl 250 first aid and i haven't had any trouble lvling up FA #4 the mobs that drop silk/wool have cash too along with greys and fabric so they make more money #5. those mobs are also more prone to be guarding chests and stuff that gives you additional loot as opposed to wandering beasts.

:) your choice

As for you other proffessions, follow the other's advice. Just lvl them up along with your char, it'll come naturally!

Have Fun

Actually, I found as a rogue, having the anti-venom was very useful, as the damage caused from the poison breaks stealth.

I wouldn't recommend farming the sacs, but seeing as how you get 3 anit-venom from one sac, it's worth making the anti-venom if you do find some sacs.

I use anti-venom with my Rogue and Warrior. It does come in handy every now and then as long as your using one that's high enough level for the poisons you're messing with.
