I agree, Evil is full of it. And I'm an AoE-specced level 60 Frost Mage :-P There's a lot of stuff I wouldn't dream of touching that a Druid can take, no problem.

There are a few reasons people wait.
1. No gold leveling up. If you have tailoring and enchanting, that means you are not selling item drops nor cloth. Furthermore, you are buying threads and other materials for tailoring. This makes your net income very very small. Costs are tough, and if you need to grind money, you can't really use your professions to help. Most people hold off on enchanting until at least level 40, after they have a mount and (possibly) new abilities and armor types.
2. At level 60, getting the initial materials is ridiculously easy. You should have no problem clearing up through BFD on a level 60 toon, and the loot from those instances will carry you into at least 150 enchanting with zero costs for you (besides time). If you're good and have the right class, you can go through SM to take your enchanting even higher. After that point, it gets more difficult to solo instances, especially the bosses. But your enchanting should already be up over 150, and you'll have spent very little money.
Another reason to wait for a high level is available materials. A high level can go on instance runs to get level 50+ BoE drops (or worthless BoP drops) to disenchant, rather than buying them off the AH.
Also, you can only get to level 300 enchanting after you are level 35. Another reason to wait.
Finally, the best recipes for enchanting are drops. If you cannot go on the runs, you will NOT get these recipes. They will go to someone who actually contributes on the run in your guild. A low level enchanter will be far down on the guild list for enchanting recipes.
Oh, one more. At level 60, it is a lot easier to make a lot more money quickly than at a lower level. Clearing 20-30 gold an hour is not difficult. This way, at level 60, you can more easily buy recipes and materials than at a lower level.
Yeah, those are the reasons. I think enchanting is great for you right now, but use it like a gathering skill; disenchant and sell the items for money to buy what you need until you are a high level. Then again, I have only made it to 170 enchanting before dropping it; what do I know?
If you do not have the Enchantrix add-on, or another similar to it, and are browsing the AH to find cheap items to disenchant... drop enchanting right now. Enchantrix, or a similar add-on, is the key to making the moo-lah with disenchanting.
