It depends on what you mean by "best" and what other profession you have. If by best you mean a profession that will help you then mining+blacksmithing will help you make weapons and armour you can use. However, as a rule, anything you can make will be outstripped by that which you acquire as drops. At lvl 44 you could be doing Uldaman and ZF, where you can get http://wow.allakhazam.com/db/item.html?witem=9413

For example, all better than what you can make.

If you PVP a lot then Mining+Engineering is a fun combi. You can make bombs and trinkets for you and make some money selling scopes, guns and quest items to others.

If by best you mean make money then I like herbalism+alchemy. Though skinning+mining or Herbalism can also bring in the cash.

Ofc these are just my opinions. I would say that leatherworking is a very tricky profession to make money at, though devilsaur and stormshroud sell OK on my server.

If it's money you want, then 2 gathering profs are good. If it is to be of more use to your character, then I would lean towards something like Alchemy.

You can either do Herb/Alch or just buy the mats on the AH (a lot are still fairly cheap).

If you have money for mats (and leveling), Engineering/Alchemy would be amazing.

For moneymaking tips (i.e., professions that earn money), check my sig.

As has been mentioned, Alchemy is useful for making potions, which give stat boosts, as well as some selling well on the auction house. Engineering can be useful if you want things that might help in PvP. A lot of Engineering items require the user to have Engineering, however, so a lot of the things that can be made aren't really sellable to general consumers. Enchanting is a money sink at lower levels, but disenchanting items can bring in some moey if the mats are sold on the AH, and at higher enchanting levels, there is a demand for enchants (firey, crusader, etc).

My 2 cents...
I also was a warrior and initially did skinning/LW. But it next to useless as you can't benefitially use the products you make (why wear leather when you have plate!) and certainly on my server they didn't sell for much. I switched to herb/alch and didn't regret it for one moment. Firstly healing potions are a huge bonus for a solo warrior and also useful in groups when the healers are OOM. Swiftness potion - tanks have few other means of quick movement unlike hunters, druids, shams and blinking mages. Also +strength,+armor, +agility and invisibility potions all very useful. I found that in an instant I was a more soloable class. I also at the high end (lvl300 herb) made a fair amount of gold selling herbs at the AH.
I would also recommend you max out your first aid, fishing and cooking. First aid in case you want another profession and you still need to self-heal. Fishing: a money maker but also a must for alchemy as you'll need eels, oily blackmouth and firefin snappers. Cooking - another way of getting buffs.

eeeewwwww... only take blacksmithing as a favor for your guild, and only if they offer a significant amount of help in aquiring the mats/rep/plans

herb/alchemy is a great combo for a warrior. powerlevel it up to 275 asap and start xmuting and banking arcanite for your lionheart helm and stuff.

gift of arthas pots + sharpening stones = grinding goodness

free action pots for when you come across a mage in world pvp

restorative pots for when you come across a priest or lock in world pvp
