You can look into taking up herbalism/alchemy. Although it is a little dull, when you get into the higher-end herbs and potions, you can make decent money on the auction house. Also, there are cetain potions that cater to a certain class. Like Greater Fire Power, Greater Shadow Power, Rage Potions. (Added Bonus: you get health potions! And, you can give your warrior rage potions for instances...when I do it kinda ensures that he protects me!)
Another option would be tailoring/enchanting. You can enchant items you make and sell them on the auction house, or just sell the service of enchanting to people.
Skinning/leatherworking is also a good combo. You can, again, make and sell.
Skinning/enchanting. Enchanted leather will sell decently on the auction house.

Fishing can yeild good money. It is also a good thing to level up if you take up alchemy, as some fish are used in potions. If you aren't an alchemist, then selling the fish may also yeild some profit. Fishing can be very very very boring, which may be a reason some people overlook it.
Also, don't forget cooking. Cooking not only makes you food, but if you are a hunter you can feed your pet. Or, if you aren't a hunter you can sell the food that you make on the auction house for a small profit...or sell to a vendor.
