I'm a 70 Hunter with herbs and mining at the moment. I already have my epic flyer and I'm looking for a crafting profession that will give me a steady flow of income. Should I drop herbs and pick up jewel crafting?
Your help would be appreciated.

IMO ore and herbs will be the best steady income you an get. You could lvl a prof like JC but you will spend alot of time trying to get the gems and sitting around Shat yelling that you are trying to sell gem cuts or otherwise. The flow of income is dramatic when you compare mining or herbalism to crafting.
By the way I have on Shattered Hand Server,
70 Troll Mage Enchanting/ Jewelcrafting
70 Undead Priest Mining/Tailoring
70 Tauren Shamman Herbalism/ Alchemist
70 Tauren Hunter Skinning/ Leatherworking
And the money I make all comes from farming herbs and ore.
Stick with the farming of ore and herbs.......;)

Gathering professions are always better than crafting professions when you're talking pure money making. I am a Jewelcrafter with nearly every single design currently in the game (missing a few Hyjal cuts). I have spent thousands upon thousands of gold to get to where I am. When I devote my full attention into making money, between mining and buying ore off the AH, I can make good money.... I made my epic flying mount in less than two weeks.
Having said that... There is severe competition. Idiots that flood the market with gems making cut gems worth very little compared to their raw counterparts. Heck there are even some gems that are worth LESS cut than raw. There is also the expectation by many people that you will invest several hundred gold for a single gem cut pattern, and cut their gem for them free of charge.
There is very little reward for actually BEING a jewelcrafter. The trinkets are easily replaced, the epic craftables are a joke, the BoP gems are nice but since they are Unique-Equipped, their overall effect is minimal at best. Its just as easy, if not easier, to find someone else to cut your gems and prospect for you than it is to level up your own jewelcrafter.
I didn't get into it for the money. Actually, outside of maintaining gold for raiding, I don't really use it to make money at all anymore. However I do it to provide a service to my guild, and to that end I have been extremely successful. I can cut pretty much anything anyone needs, and it helps them out not having to look for someone to cut gems. I have no regrets about being a jewelcrafter, but I don't think it is for everyone.

I second this thought. I've found JC to be extremely frustrating. When TBC came out I made my Draenei Priest and excitedly took JC. Right now her JC is stuck at level 209, mostly because I REFUSE to spend ridiculous amounts of money at the AH to level it. I had mining, but on my server there always seemed to be an abundance of level 70's running around farming the lower level nodes, so mining was scarce. That's not a complaint.... that's just the way the cookie crumbles.
To make a long story short, I dropped the mining at level 62, partly out of frustration of having to go back to lower level areas, and partly to start working on my tailoring to make the epic purples for level 70. My JC is still sitting at 209.
My plan at the moment is to just let it sit. If I can move it up somehow without spending tons of money, fine...great. If not, I'll probably drop it when the expansion comes out and take up the new Inscription (?) prof.

I wouldn't pick up jewel crafting to make loads of gold. I'd pick it up to help my guild out, pay the repairing bills and most of all try something new. I'm so sick of farming herbs and ore all day.
I'm making a hunter and thinking about mining/jewelcrafting. I like having crafting professions in WoW, its sort of like a mini-game I work on when I'm a little bored leveling my character.
As you've got your epic flyer, you must be doing something right. If making money is your primary goal, stick with what you've got.
If you want to make something useful, I'd say have a look at your auction house and see whether there's a niche in the market at high level - something you can profit from.
Whether it's cutting gems, making potions or transmuting primals, making guns or whatever, if you can find something that'll make you money then go for it. If not, stick to gathering.

I am a 375 skinner and 347 JC, and I didn't spend ridiculous amounts of money leveling it up, maybe 300-400g total, you just gotta be smart and jump on deals when you see good ones. I do have a 70 that I use to farm ore though, so that may be why I didn't spend alot of money on it. The skinning is where I make a ton of money though, JC doesn't give me as much cash flow, but it still is a nice income, because, for some reason, the gems have been steadily increasing in price on my server. WOOT!!

If spending 10,000 gold to make 5,200 gold is worth it then I agree. I got some of my gem cuts for 150-300g, but I also got others for 600-800g a piece. However now that I have pretty much everything I can make money whenever I want (though for some reason I don't usually bother).
