The problem with that idea is that in order to really make JC worth it, you need to get it up to 350+ where the rare gems/patterns are usable. To level the skill that high requires level 50...suddenly that alt is a lot of work.
On the main question, as others have said, I would not recommend dropping mining for JC. Prospecing ore will be the primary source of gems. If you don't have mining and you're buying gems off the AH, you're pretty significantly cutting into your net possibilities.
If you do decide to go JC...again, as others said...make sure you stockpile mats and closely follow a leveling guide. I leveled a JC with the benefit of mats from other alts and tried my best to follow a guide, but still ran into a speedbump in the high 200s. It takes a lot of gems to get skill up points in the 275-300 range. It can get awful expensive when you don't get skill ups from yellow patterns and have to go buy more gems or ore to prospect.
All in all, I would not recommend pairing JC with anything but mining...it's doable, but it will probably cause issues.
