Strange Dust can go for as low as 80s per stack of twenty if the market has been flooded. This happens if a) a lot of enchanters on your server decide to sell their stuff at once, undercutting each other's prices until it's a huge bargain or b) one guy has stockpiled huge amounts of it, then pushed it all into the AH at a low price so that no-one will undercut him and he's guaranteed to sell most of it.
There is nothing wrong with a price of 80S for a stack of strange dust, as long as you can make a decent profit at it. If I can buy 4 pieces of L18 armor (avg 5 dusts each) for 10S each, I've made my 50% margin.

If you have funds, one option in that situation is to buy all the cheap dust, then sell it at a higher price once you've mostly cornered the market. The seller makes a profit, you make a profit, everyone but the consumer makes a profit, so everyone who matters is happy.
and some guy like me will continue making his profit at a lower price and outproduce your tailfeathers six ways from Sunday. I certainly don't mind if it's you buying, but I'll wager that I can produce more than you can buy and you'll end up broke while I get rich off
your gold.

The other option is to sit on your laurels and wait until the price of strange dust goes up, which on my server has been observed as high as 4-5g per stack. See, every low-level enchanter will cotton on that this dust is cheap, buy it to grind a little, and then the market stabilizes itself. This is what I recommend you do, because it has very little risk - you're just saving up, essentially. The dust isn't going to go stale.
If you wait, I'll continue doubling my money while your dust sits in inventory doing nothing.

Useful professions to pair with enchanting: if you intend to level enchanting, tailoring is a good pick because you can make your own green items without needing a gathering prof, and you can make them from readily available and often cheap supplies (cloth, which drops off all humanoids, and you fight lots of humanoids). This allows you to make your own greens without buying them, which increases your profits by about double.
Check on the price that cloth is going for before you decide tiloring is a good option. If the raw cloth sells for more than the greens you produce, it doesn't make sense to take tailoring. Sell the cloth and buy the cheap greens other tailors produce on the AH.

Otherwise, Mining is a good choice; Skinning doesn't make as much of a profit for your effort, in my experience. Leather is just too cheap.
Skinning vs. Mining is a quantity vs quality question. Skins are easy to find, and skinning is the easiest gathering skill to level. Sure, ore sells for more, but how many stacks of leather can you get in the same amount of time it takes you to get one stack of ore? Gold per hour is about the same.

The strategy of emptying out an AH's supply of low-level greens to DE it is short-term, since you run out of greens really quick, and if there are two or more enchanters doing it at the same level range, it quickly becomes unprofitable. Don't expect to do it more than once a day.
Actually, it's best to do it more than once a day, especially if you have rivals. Giving the AH a little time to get more items in the proper price range is not only a good idea, it becomes mandatory.
Summary: Zapdoodle doesn't know sh*t from shinola. He might make some gold, but certainly not as much as I make.
