Hi,
I know it's not possible by default. But maybe there's some addon or something to help track minerals and herbs on minimap simultaneously?

No, not simultaneously. Your best bet is doing 1 of (or both):
Make a macro to switch between track herbs/track minerals that you can push every 1.5 seconds (global cooldown) while you are riding
-and/or-
Use an addon like cartographer/gatherer that has common placed listed/marked on the map where things tend to spawn so you at least have an idea of where to go.

the macro your looking is a cast sequence macro
goes like this
/castsequence Find Mineral, Find Herbs
and it will swap between
your best bet is to keybind it to something so you can spam it while running about
THIS GOES BEST WITH CLASSES THAT CAN STEALTH ( it enables you to skip mobs while going into caves for mineral nodes

wasn't there a mod that swaps tracking modes every time you jump?
Doubt it but... look at it this way:
Why would you want to jump every time you want to switch tracking if you can do it with the macro posted above and not look like a stupid bunny?
