If you must switch, you would be much better off with a new profession that complements the one that you're keeping. For example, blacksmithing, engineering, and jewelcrafting all go very well with mining. If you prefer, you could also drop mining and go with leatherworking.
While some people can make a rational decision at end-game to switch their main character to two crafting professions, it's generally a terrible idea for anyone to do that sooner. In all honesty, the best advice is for you to continue what you've been doing so well thus far. Get both gathering professions to 375/375, fund your epic flying mount and then buy mounts for all your alts. There's little that you need from a crafting profession that you can't get in exchange for cash (which you'll have in abundance!).
