Are you into the professions to make money, or are you doing it for the stuff you'll be crafting?

Neither of those combinations will make you much gold until you get to the (much) higher levels. Here's the reason: you'll be farming sellable mats to waste them leveling the profession and selling the stuff you make for (much) less than you would have gotten for the mats alone. The only reason for crafting professions is either for the fun(?) of making stuff, or because you want to make stuff for yourself, at least until you get above 350 in skill and start getting the rare recipes.

If you want gold instead, choose two gathering professions: skinning + mining or herbalism. Add in fishing. Sell mats to the people who think that crafting will make them rich, instead of losing gold with every item you place into the auction house.

Herb/Alch is really easy to level.

Mining is easy to level

JC - VERY HARD to level. Even with Mining. Unless you like to farm nodes for a VERY long time (instead of questing and leveling), you will never have JC to the level that you can use it. Until lvl 70 of course.

That being said - listen to Mike. His post lays out what you need to know, or the info you need to provide for any of us to help you out.

Having a JC/Mining toon, I can attest to the difficult task of leveling JC. Been a nightmare, expensive, esp depending on prices on recipes. There is a JC vendor in SSO now and you will spend 1k in gold for all the recipes. Plus heroic badges to get epic stones.
Herb and Alc are on another toon and really does well and leveling is a bit easier.

In the late game, elixers are VERY useful in Kara and other instances, along with gems. But, alchemy is also one of the skills that you can actually benefit from while leveling. Jewcrafting can help late game, but while leveling, when you make a new necklace, you are just going to sell the old ones. With Alchemy, you can use the elixers you get, and share them with party members in instances. Also, with alchemy, people are going to keep coming to you you your 24 hour cool downs. And, if you proc, you can use the extras, or sell them on the AH. Also, guildmembers will be wanting the elixers, potions, etc. that you can make for Kara runs, instances, and other things. Any leftovers, you can sell on the AH for a LOT of money. JC, along with being hard or expensive to level, only benifits from the 350+ levels. And by then, you'll probably be in the Outlands, which is ways away for you. Unless you really want to go into mining and JC, I would go Herbalism and Alchemy.

If you want pure money, then go into Skinning and Mining, or Skinning/ Herbalism. You won't waste your materials leveling, and you make a lot of money selling your finds on the Auction House.

Hope this helps.

If you can get someone else to prospect for you, take mining and enchanting. Prospect the ore you get. Play the AH and disenchant items. Look up a guide on enchantrix to find out what items to buy and d/e. As Mike says, go with fishing to fill in the gaps in income (or just to relax).
