You say you doubt Blizzard would do it but what about tailoring/enchanting? There's two "crafting" professions that don't need any gathering to bolster them and they fit pretty much hand-in-glove together. Sure, they aren't tied - you can take one without the other but it's pretty darned close.
Still have to "gather" your cloth if you don't want to pay out the nose for it. Just so happens that the nodes usually have hitpoints and fight back ;D
Sort of a silly question, OP. Nobody can tell you what other profession to take. You've got herbalism covered. Herbalism is the natural match to Inscription, so there is no matching profession. Go with whatever floats your boat.
Scribes will make Vellum. Vallum is paper. It's paper that can be traded. It can be traded to an Enchanter like any other tradable item (mail, face-to-face, auction), and the Enchanter can then enchant it the same as they would a weapon or a piece of armor. They can then trade the enchanted vellum. There is no mandated link between Inscription and Enchanting.
My rogue is currently leveling Herbalism...I'm at just over 350 skill at level 61. I'll probably hit 375 before I'm done in HFP. My Hunter also has 375 Herbalism and has spent a significant amount of time cruising around gathering herbs for the bank (I've got well over 1 full gulid bank tab packed with herbs). Once the patch goes live, I'll pick up Inscription on my Rogue, ship over vast quantities of herbs from my Hunter, level as far as I can (likely to cap) and then with any leftover herbs, I'll drop herbalism from my hunter and take up Alchemy. My Rogue will gather the herbs to supply her own Inscription + hunter Alchemy, and I'll have a skinner, a leatherworker, enchanter, alchemist, an herbalist, a scribe, and an up-and-coming miner/JC going into the expansion.
Why?
Because those are the professions I chose. There's no specific reason for it, although I do somewhat expect to make an insane amount of gold in the first few days after the patch.
