I just hit 360 inscription today, and the trainer has no more spells for me. Everything I have now is either green or gray. I could potentially hit 365 with the green ones, but I doubt even if they let me get to 370 that they would still be green by then.
Is there another trainer somewhere else or am I just stuck until the xpack hits?

You are stuck at that till Xpack. I have heard that all professions will be getting skill up recipes at 350 in WotLK, and in PTR pre 3.0.2 you could actually learn the recipes that required wrath herbs at level 350 but couldn't make them. I would say you are now safe to stop leveling inscription until xpack.
I hit 356 inscription on patch day and haven't made any effort to push it beyond that because everything I've read says that major glyph recipes will be available starting at 350 skill that use pigments from Northrend herbs. The skillups I got beyond 350 were actually earned in the process of making glyphs for sale, not specifically for the purpose of skilling up.
I've already got a minor glyph recipe that uses Ink of the Sea. (I also got an 'NYI' DK glyph from research today...bad enough it's a DK glyph, but an NYI DK glyph to boot? WOO!)

I've discovered 3 DK minors (including the NYI one), blechh.
I'm in the same boat, 361 skill. Will wait until WOTLK to keep leveling. Lots of recipes listed from the 350-375 range using Ink of the Sea.
