Opinions NeededFollow

I know it is a matter of personal preference really, but i'd like to know what some of you think about my dilemma.

I have 350 herbs and 350 skinning on my Warrior right now. I chose it so I could get a head start on my finances on a new server. Now that I have my epic flyer, and a decent amount of cash flow, I am considering switching professions. What I am going between is this:

Drop skinning for Inscription
Pros
-Already have 350 herbs and a nice herb Gatherer database to work with
Cons
-Everyone and their mother is doing the Inscription thing right now

or...

Drop both professions for Engineering and Mining
Pros
-My Horde Warrior has the Engy flying mounts which I LOVE. Would drop both professions just for this.
-Hogs, anyone? :)
Cons
-Would have to level up two new professions instead of one

With that being said, if you were in my shoes, what would you do?

Recall that if you drop skinning and herbalism you also lose your crit bonus from skinning and your free healing spell from herbalism.
