Which, or how many recipes does it take to increase baking cap limit above 200? I have learned hundreds with no increase.

Learning recipes is not the barrier at 200. That is at 300.
But here, the barrier is lack of appropriate AAs. It could be the one that allows a second skill to exceed 200 or the one that applies to the individual trade (baking).
