Tailoring is a profession for creating cloth-based items.

Tailors mostly create cloth armor for casters and for casual wear. An additional important product they supply is bags.
Tailoring requires cloth, which is a looted item found on most humanoid enemies and occasionally certain other Mobs as well. It does not require much else in general, but many recipes need vendor-bought materials such as dyes and threads.
Tailoring is an excellent tradeskill for mages, priests and warlocks. It is a stand-alone tradeskill that pairs well with enchanting, and creates a few very powerful items.
In terms of making money, tailors often turn to bag-making or to selling special thread that serves as a sort of enchant. Certain items require the creation of special cloths that a tailor can only do once every several days, so even a fairly inactive tailor or an alt can be useful to create these materials such as Mooncloth and Spellcloth.
There are three special epic sets for the three specializations which are very popular with casters. These sets are great for entering into raid content as they are on a par statwise with T4 at least. They lack survivability in the form of stamina, but for entry-level raiding, they will serve you very well.
Tailoring shines again at endgame where you can craft yourself some of the best in slot gear for mages and warlocks. Some of this gear is BoP so you must be a tailor to craft it yourself. Some of it only gives set bonuses if you are a tailor with skill above 350, although the items are BoE.
Tailoring specialization requires a skill of 350 and begins in Lower City in Shattrath. The three areas of focus are Mooncloth (healing-based), Shadoweave (shadow- and frost-based), and Spellfire. (fire- and arcane-based)
It's worth noting that there's a lesser, but unfortunately similarly named, Shadoweave set/trainer available to players levels 37 to 42. This set is especially good for Shadow Priests and Warlocks. The trainers are little-known and there is only one for each faction.
To learn to create the lower-level Shadoweave set, you don't technically need to specialize, you simply need to find the Master Shadoweave Tailor for your faction.
For the Horde, this tailor is named Josephine Lister and she is on the outer circle of the Magic Quarter in the Undercity.
For the Alliance, Jalane Ayrole can be found in the farthest SW appendage inside The Slaughtered Lamb in the Mage's Quarter on Stormwind City.
The recipes range in Tailoring skill from 210 to 240 and the set ranges from minimum levels of 37-43. Note that this is not a true "set" in that there are no set bonuses. However it is a very good set for those classes that rely on shadow damage even without bonuses.

Embroidery is a new part of tailoring that will be implemented in the WotLK expansion pack. It will allow Tailors to add an enchantment-like Embroidery to their cloak. So far only 3 embroideries have been revealed:
Lightweave Embroidery Embroiders a subtle pattern of light into your cloak, giving you a chance to cause an additional 800 to 1000 Holy damage when you damage an enemy with a spell. You can only embroider your own cloak and embroidering your cloak will cause it to become soulbound.
Darkglow Embroidery Embroiders a magical pattern into your cloak, giving you a chance to restore 300 mana when you cast a spell. You can only embroider your own cloak and embroidering your cloak will cause it to become soulbound.
Swordguard Embroidery Embroiders a magical pattern into your cloak, causing your damaging melee attacks to sometimes ignore 1000 of your target's armor. You can only embroider your own cloak and embroidering your cloak will cause it to become soulbound.

A fun addition to the Tailoring profession is the ability to make your very own flying mount. That's right, you can make 3 different types of Flying Carpets - a Flying Carpet, Swift Flying Carpet and a Magnificent Flying Carpet. These carpets are usable in Outland and Northrend areas only.
Another new addition is your ability to embroider your own cloak to buff your abilities and stats. These are not re-sellable and only able to be used by the tailor, but they seem to be very nice additions similar to the Enchater-only Ring Enchants. (yes, the act of embroidering a cloak makes it souldbound, nice try though!)
Tailors will be able to create 20, 22 and 32 slot bags (Frostweave, Glacial and Abbyssal respectively). The first two are taught by a trainer but the last is as yet unknown.
